what is raising agent
something added to sweet or savory mixtures to make them rise
eg of raising agents
air
carbon dioxide gas
steam
eggs as a raising agent
traps certain amounts of air but the foam produced rises to the top of the liquid and some escapes, if sugar is whisked together it is more stable foam is produced
egg white = stable , easily traps air to form a stiff foam which is more stable than a whole egg
raising flour as a self raising agent
raising agent is usually baking powder
flour reacts with the liquid of the mixture to produce carbon dioxide which raises the mixture
bicarbonate of soda as rising agent
produces carbon dioxide when mixed with acidic ingredients like buttermilk, yoghurt
needs to be measured properly so that there isn’t a unpleasant taste

moisture and food ( sugar and starch ) breaks down into carbon dioxide and alcohol - this is called fermentation
