New York style, baked cheesecake with biscuit base. Fresh strawberries, on top. Finished with strawbberry-golden lime sorbet & creamcheese ice cream. Garnished with rose petals.

Served over a bed of mango curd and chocolate soil with a scoop of vanilla ice cream on side.
Pineapple pavlova with coconut-lemongrass sorbet
Coconut semifreddo with mango coulis
Coconutmousse (contains chocolate) served over coconut water granita with mangocompote, fresh mango cubes, mango gel.
Garnished with basil cress and coconut chips.
Granita = crushed frozen fruit juice
