Orgin: Lombardy, Italy

Grape: 95% Lambrusco Gasparosa, 5% Lambrusco Salamino

Tasting Notes: Cherries, Strawberries and Blackberry Jam, refreshing acidity. This wine will pair well with almost all of our food!

Fermination/Aging: Fermentation at low temps for 6 months (the norm is 2-3 weeks!) in stainless steel using
Charmat method. Kept in tank at low temps and then bottled to order.

Notes: Citrusy vibrancy with some salty minerality. There are notes of lemon, peach and ginger. The wine has very high acidity and a round, medium body.

Technicals: Aged on the lees for 6 months and there is no filtering or added sulfur, so the wine does have a
slightly creamy, lemon curd/creme fraiche vibe
