Methode Champenoise
A labor intensive, costly process. Secondary fermentation inside the bottle creating bubbles. All champagne and more high quality sparkling wines are made by this process.
What is a port?
Brandy infused wine.
Ruby- blend of years and grapes. Aged in concrete or stainless.
Tawny- blend of harvests. Aged min of 7 years in casks to promote oxidation and distinct flavor.
Aged tawny- the best in tawny port. Aged 10, 20, 30-40+ years
What is a dessert wine?
Late harvest wines. Sweet, fruit naturally dehydrates enhancing flavor, complexity and natural sugar.
What is an ice wine?
Grapes left on the vine until first deep front. Freeze and thaw cycle concentrates sugars and flavors. Germany origin. Canada most widely respected. Typically Vidal and Riesling grapes. Melons, sweet fruit, nutty aroma.
