Effects of preparation methods on vitamin C

A
  • Avoid soaking as vitamin C is water soluble so it will leach out into the water and will be lost unless the water is used as a gravy
    -Do not prepare too much in advance or the vitamin C will be lost
  • Avoid peeling as most the vitamin C is in the skin
