What does sweetness in food do to wine ? What wine should you pair with?

A

Increases perception of bitterness, acidity and burning effect of alcohol in wine. General rule select a wine with a higher level of sweetness.

What does acidity in food do to wine ?

A

Increases the perception of body, sweetness and fruitless of wine. Some acidity can bring a very high acid wine into balance and enhance fruitiness. Low acid in wine and high acid foods can make wines seem flat, flabby and lacking focus.

A

Increases perception of body and decrease bitterness and acidity in wine. Salt can help soften some of the harder elements
