Ziro ($18)

Story:
Ziro, a place in northeastern India’s Arunachal Pradesh, had kiwi growing wild in its valley.About 20 years ago, the locals started organized growing of kiwis domestically. Due to the abundance of the crops, the local tribes started to make kiwi wine to deal with the surplus. This unusual use of kiwi has become a global case study in innovation, even receiving geographical indication (Gl) status.

We have created a cocktail by mixing kiwi wine with citrusy gin. This cocktail is great to just sip or to enjoy with a meal. It is dry and aromatic, perfect for spring.

Drink in few words: Ziro valley inspired Kiwi wine served with citrus forward gin.

Kalam ($20)

Story:
Kalam means pen! My earliest memory of ‘Kalam’ comes from Bollywood movies where there was a lot of focus on the flourish with which criminals were sentenced by the judge using a traditional pen.

Our ‘Kalam’ drink is inspired by this. It has the color of ink and is made with a nostalgic pickle recipe from my mother in India, using mulberries found around Charminar, Hyderabad. The drink has the flavors of pickle and pairs perfectly with Tequila or Mezcal. We serve it with edible ink and an edible pen. It’s great as an aperitif or with a meal, and it is a fantastic alternative to dirty martinis.”

Drink in few words: To bring vintage style of pen that were used in India. A drink that has colour of ink made with Blueberry achar (Pickle), tequila, and edible pen & ink.

Kohinoor (Ko-hi-noor) Price: $29/43/ 63/ 63/600

Story:
Kohinoor Diamond. Kohinoor is the world biggest cut Diamond. Once it was in India under Mughals and was taken over by British. Later was moved to UK while India was ruled by British. Last it was in queen Elizabeth’s crown. Today, the diamond is on public display in the Jewel House at the Tower of London. We use Macallan from UK which is like a jewel in single malt whiskies, Cardamon which is an Indian Digestive spice, clovers honey from Bee2Bee and Oloroso sherry.

Drink in few words: For Old Fashioned Lovers! Macallan of choice, Organic Houston clover Honey sherry infused with fig, Cocchi Torino, Blend of Cardamon bitters.

Drink type: Digestive (As all ingredient’s are digestives)

Upsell options: Macallan 12YO, 15YO, 18YO. Rare or 25Y0

Can it be Sugar free: No. For that we will have take off main ingredients and it will not taste good.

Name: Pumpkin Spice Kappi (Ka-appi) ($20) (That’s the way people in south India pronounce)

Story:
Filter coffee is a thing in south India! pumpkin spice is a thing in America and Tequila is a thing in Texas, So we blended it. As nostalgic memory of drinking morning coffee before espresso martini’s and Instagram is reading new paper. We serve it with edible new paper which covers news from 15th August 1947 (Independence of India)

Drink in few words: Perfect for Carajillo and expresso martini lovers! Coffee, Astral Reposado infused with Pumkin spices, and Licor 43.

Drink type: Digestive (Coffee and Licor 43 are digestives)

Upsell options: Not possible as it is pre made. But Decaffeinated is possible.

Glass: Turkish tea cup

Garnish: Edible new paper and coffee bean coated with dark chocolate.

Name: Paan Negroni ($20)

Story:
You will find these small shops selling cigarettes and paan all over India. Paan is used as a digestive and mouth freshener in India as it contains fennel, rose, honey dates and cardamon. Negroni is a bitter sweet cocktail that is perfect for aperitif and also as digestive. So, we have put these cultures together.

Drink in few words: Perfect for Bitter sweet drink lovers. Paan infused by Sous vide with Tanqueray Rangpur, Ketel One vodka and Campari. Later blended Dry sherry and Sween Vermouth.
And served with Paan leaf stuffed with dates.

INSPIRED BY SHAMMI’S OBSESSION FOR BOURBONS & OLD FASHIONEDS. OLD FASHIONED INFUSED WITH INDIAN SANDALWOOD AND AN ADDITION OF CHOCOLATE BITTERS, FINISHED WITH COCOLATE WITH A MUSAAFER STAMP ON TOP.

Drink in few words: Old Fashioned flavoured with sandalwood & Chocolate.

NAMED AFTER STREET RUNNING IN CALCUTTA, INDIA WHICH WAS NAMED AFTER A BRITISH MERCHANT “WILLIAM CAMAC”. WE PICKED 5 PROMINENT SPICES OF THAT REGION AND INFUSED THEM INTO HONEY. SORT OF AN INDIAN MARGARITA WE CALL IT

it is made with honey infused with spices. If we try to make it without honey it will be like a regular margarita

IN WESTERN PART OF INDIA GUAVA IS CALLED “PERU” DUE TO TRADING WHICH TOOK PLACE IN 17TH CENTUARY WHEN PERUVIAN TRADERS INTRODUCED INDIA WITH GUAVA IN EXCHANGE FOR SPICES.
HOWEVER, INDIANS DID NOT KNOW WHAT TO CALL IN AFTER PERUVIANS LEFT AND THEY STARTED CALLING IT A “PERU” SINCE IT CAME FROM THERE AND TILL DATE CALLED PERU ACROSS WESTERN REGION OF INDIA.
