STORY / INSPIRATION:
IN INDIA THERE IS A REPERTOIRE OF COOKING EGGPLANT. EACH REGION COOKS EGGPLANT IN A UNIQUE WAY. IN SOME REGIONS YOU WILL SEE A TEMPERING OF TOMATOES, WHILE FEW REGIONS COOK THE EGGPLANT WITH SESAME SEEDS. KEEPING IN MIND THE DIFFERENT TECHNIQUES OF COOKING, WE AT MUSAAFER HAVE GIVEN A TWIST TO THIS LEGENDARY DISH BY TEMPERING IT WITH HOMEMADE SPICES AND USING ALL PARTS OF THE VEGETABLES USED TO ASSEMBLE THE DISH. (SKIN OF EGGPLANT, ONION, TOMATO AND SERRANO’S)
