IN SOME REGIONS YOU WILL SEE A TEMPERING OF TOMATOES, WHILE FEW REGIONS COOK THE EGGPLANT WITH SESAME SEEDS. KEEPING IN MIND THE DIFFERENT TECHNIQUES OF COOKING, WE AT MUSAAFER HAVE GIVEN A TWIST TO THIS LEGENDARY DISH BY TEMPERING IT WITH HOMEMADE SPICES AND USING ALL PARTS OF THE VEGETABLES USED TO ASSEMBLE THE DISH.
