What are essential oils?
Concentrated extracts of volatile, non-water soluble aroma compounds from plants.
They’re a mixture of many different compounds
What are essential oils defined by?
The fact they convey characteristic fragrances
What are essential oils used in?
Perfumes, cosmetic and cleaning products and flavourings in foods
What is a key component found in most essential oils?
Terpenes
Are terpenes saturated or unsaturated?
Unsaturated(contain double bonds)
How are terpenes formed?
By joining together isoprene units
What is the chemical formula for isoprenes?
What’s is the molecular formula of an isoprene?
2-methylbuta-1,3-diene

How do you work out the number of isoprene units in a terpene?
One isoprene units had 5 carbon atoms so add up the number of carbon atoms and divide by 5

Fruit and floral flavours and aromas
