What are proteins
They’re major structural materials of animal tissue(form skin,bone,teeth etc.) and are involved in the maintenance and regulation of life processes(used to build hormones)
What are enzymes?
Proteins that act as biological catalysts
What are proteins made up of?
Amino acids(smaller molecules)
What is the functional groups in amino acids?
Amino group(-NH2)
Carboxyl group(-COOH)
How are the amino acids joined together in a protein?
What functional groups are joined together?
What does it eliminate?
Condensation reaction
The amino group of one amino acid and carboxyl group of another are joined together
Eliminating water
What is the function group/like in a protein?
Peptide link/amide link
(-CONH-)
What does the order of amino acids in a protein determine?
The type of protein formed
What are essential amino acids?
Amino acids that the body can’t make so have to be acquired from the diet
What happens to proteins during digestion?
Enzyme hydrolysis of the protein producing amino acids
What intermolecular forces are there in proteins?
Hydrogen bonding as they contain an -NH
What do the long chain molecules in proteins form?
How are they held together?
Spirals sheets or other complex shapes
By intermolecular bonding between the side chains of the constituent amino acids
What happens when proteins are heated?
The intermolecular bonds(hydrogen bonding etc.) are broken allowing to protein to change shape(denature)
What happens in foods when a proteins denatured?
The texture is changed when cooked
