What type of water is used at Hakushu?
Water is soft as opposed to hard water at Yamazaki
Which distillery is Hakushu currently using?
Hakushu East was actually the second distillery built on the location
Where is Hakushu located?
-Chubu
-In a forest location at the foot of Mt Kakomagatake in the Southern Alps
-High altitude (2323 feet) vs Yamazaki at 82 ft
-Cooler climate than Yamazaki
-Suntory acquired a 204 square acre piece of land and 83% of the land is still unused
When were the two phases at Hakushu developed?
-Original distillery built in 1973 (Hakushu 1)
-in 1977 capacity doubled and building was added (Hakushu 2) - when it was built Hakushu 2 was biggest distillery in the world (Hk 1 & Hk 2 had 24 stills)
-In 1981 Hakushu 3 - Hakushu East was built across the street and the old distillery (Hakushu 1 &2) were shut down.
What is the still configuration at Hakushu East?
-8 pairs of stills - all different sizes and slightly different shapes
-direct heating (gas) except #2, #7,#8 spirits (steam)
-lyne arms mostly descending
-shell and tube condensers for all except wash still #3 (worm tub)
What is the barley used at Hakushu?
-Like Yamazaki, Hakushu uses only barley from UK at various peating levels
Still configuration at Hakushu?
-Wash stills (8) all direct fired
(5 straight, 3 latern) all with downward lyne arms
-Spirits stills (8) all direct fired except #2, #7, #8
(6 straight, 2 latern) 6 of 8 with downward lyne arms
When did the grain distillery open at Hakushu?
-December 2010 opened a grain facility on site (much smaller than Chita)
What is the purpose of the Hakushu grain distillery?
-Experimentation and exploration of variation
-Different mashbills
-different yeast strains
-different distillation strengths (between 60% and 94% abv)
