A
  • yeast ferments the sugar to produce carbon dioxide – this is the gas that causes the bread to rise

how does bacteria help to make yoghurt?

A
  • non-pathogenic bacteria is added to milk that has been pasteurised
  • Bacteria ferment lactose and produces lactic acid
  • The lactic acid acts on the proteins in the milk to thicken it and give it a sour or tangy taste
  • probiotics are a supplement in some yoghurt which are said to give health benefit
