Vilmart & Cie - Brut, Grand Cellier, 1 er Cru, Rily La Montagne, NV (70% Chardonnay, 30% Pinot Noir - 30+ months on lees gives a bready character. Notes of biscuit, lemon curd, dried florals)

Taittinger - Brut, La Française, Reims (40% Chardonnay, 35% Pinot Noir and 25% Pinot Meunier. 3rd oldest Champagne house in history and one of five that still use chalk underground cellars. Lemon zest, pear, toast)

Zonin - Extra Brut, Prosecco (Glera grapes sourced from north-east Veneto. Produced with the Tank Method which allows secondary fermentation in tank as opposed to Champagne’s secondary fermentation in bottle. Pear, citrus, fruit forward)

Chalk Hill, Sonoma Coast 2023 (Grapes sourced from Chalk Hill AVA, Russian River Valley and Carneros. 9 months in 100% French oak giving notes of vanilla, butter, fresh pear, toasted almond. Rich and full bodied)

Pierre Morey, Bourgogne Blanc 2021 (Grapes sourced from Saint-Aubin, Meursault and Pommard vineyards. Great balance of citrus and minerality with a fuller palatte)

Famille Gueguen, Chablis 2023 (Stainless steel aged with minimal lees contact resulting in a crisper style of Chardonnay. Crushed stone, oyster shell, citrus forward, white peach)

Faust, Napa Valley 2022 (85% Cabernet + Merlot, Cabernet Franc and Petit Verdot. Aged 20 months in 100% French oak. Notes of mocha, vanilla, black currant, red fruits, tobacco and graphite)

Daou, Paso Robles 2022 (21 months in 80% French oak. Blueberry, blackberry, cassis, tobacco. More fruit forward than Faust)

Château Fontanès, Pays d’Oc 2022 (From the Languedoc-Rousillon region - south of France. Lighter style of Cabernet. Mild oak inclusion. Notes of lavender, thyme, cassis)

Château Aney, Haut-Médoc, Bordeaux 2015 (Lies between St. Julien and Margaux. 65% Cabernet, 25% Merlot, 7% Cabernet Franc, 3% Petit Verdot. Earthier style of Cabernet. Notes of graphite, pencil shavings, cassis. Well balanced)
