Malts are cereal grains that are bathed in water to stimulate germination.
Germination begins the process of an enzymatic tranformation of starch and protein to fermentable sugars.
Applying heat, and drying the grains stops germination.
The amount and duration of heat can bring different colors and flavors to the beers. Similar to coffee roasting.
Nitrogenation? What is this as it refers to beer production?
Carbonating a beer with approx 70 / 30 ration of nitrogen to oxygen.
When beer is dispensed on draft a restrictor plate allows nitrogen through into the beer and blocks Co2. Nitrogen has smaller bubbles

What is Sparging?
A technique used to extract any remaining sugar from the mash.
