Whenever you enter the kitchen, you should have something in your hands that you prebussed. When you leave the kitchen, always do so with something in your hands
What are pivot points?
Seat numbers, they are important because when food is being run to a table it isn’t being auctioned off
Food runners are able to read the ticket and decide who gets which entree

Why is prebussing important?
Makes everyone’s job easier
The better you prebus, the faster your tables get cleaned and the faster you get seated again
