Warm temperatures will help speed up photosynthesis to produce the sugars, and transpiration in the grape will also be higher promoting the movement of sugar into the grape.

Cooler conditions hinder the break down of methoxypyrazines which gives off herbaceous aromas

Fog! Thick fog will impact the rate of photosynthesis as long as light levels do not drop below 1/3 of full sunshine
