- The process that occurs when the cells do not have access to oxygen.
- Two types:
- Alcoholic: produces alcohol and carbon dioxide. (yeast fermentation)
- Used to make cheese, yogurt, and breads.
- Lactic acid: occurs in muscles during vigorous exercise.
- Build-up of lactic acid will cause cramping.
