Definition of a contaminated food
When a food contains something e.g cleaning chemicals, micro organisms and physical objects harmful to health if consumed. Food can be contaminated in different ways:•Growth of pests like maggots•Microorganisms that have been transferred to food form another food. This is why diff coloured chopping boards are used in a commercial kitchen
You can generally prevent cross contamination by:
•Separating raw and cooked foods at all stages of food storage and preparation•removing sources of contamination such as a full bin•Good handlers being trained and monitored in food hygiene and safety practices
To prevent cross contamination hands must be washed when:
•Before handling food•After handling rubbish•After using toilet•After touching money
Physical contamination
When objects or substances enter food e.g hair, plasters and false nails
Chemical contamination
When harmful chemicals enter food that could cause illness or food poisoning such as cleaning agents and pesticides
Cross contamination
The transfer of harmful bacteria, allergens or other microorganisms transfer form one place to another. Can happen through direct contact
Biological contamination
Biological contamination refers to the contamination of foods by other living microorganisms. E.g bacteria like salmonella and campylobacter.
