Vitamin A from animal sources
•Vitamin A is found in different forms•Most active in the body is retinol•Found in animal sources in for of retinyl palmitate, converted to retinol in ileum/small intestine Eggs, milk, oily fish and liver
Vitamin A from plant sources
Beta carotene is a provitamin A substance in yellow/ orange pigments found in plant foods like carrots, mango, spinach and peppers.
Vitamin A function
•Healthy skin•Moist and healthy mucus membranes•Antioxidant
Vitamin A deficiency
•Dry infected skin and mucus membranes•night blindness•Poor growth in children
Vitamin A excess
Poisonous if too much is taken e.g. in supplement form especially to unborn babies
Vitamin D sources
Sunlight on skin, oily fish, meat, eggs and butter
Vitamin D function
•Regulates absorption of calcium in small intestine•Needed for function of immune system•Involves in production of red blood cells
Vitamin D deficiency
Weakened and bendy bones, rickets in children and osteomalacia in adults
Vitamin E sources
Soya, corn oil, nuts and seeds
Vitamin E function
•Maintain healthy skin and eyes• Antioxidant
Vitamin E deficiency
Very rare but can cause night blindness and muscle weakness

Green leafy vegetables, liver, cheese and green tea
Vitamin K function
Helps blood clot after injury
Vitamin K deficiency
Rare but may occur in newborn babies and will cause excessive bleeding
