What is gluten?

refers to the proteins

What is celiac disease?

it is an autoimmune disease caused by consuming gluten and when it is in the small intestine it creates an immune response

Non Celiac gluten sensitivity

it is when gluten causes GI distress without a wheat allergy or celiac disease

it is a food sensitivity to gluten but it is not a food intolerance
