GOOD: Previous 2 weeks on Productivity Tab of Dashboard show “outside thresholds” don’t exceed 10%. Cold products at or below 41°F (+/-2°F) and selected with 1 hour and placed directly into refrigeration. Frozen products are solidly frozen and selected within 30 minutes and placed directly in freezer. Hot products have a time stamp and are held no more than 3 hours in an approved warmer set at 6.5 (130-160°F) and humidity 0. Production runs don’t exceed 45 minutes. FAIR: Any cold run over 1 hour or cold product above 50°F on 1 cart, any frozen run over 30 minutes or frozen product found thawing on 1 cart, 1-2 hot foods exceeding 3 hours, or production run over 45 minutes. OPPORTUNITY: Any cold product above 50°F on 2+ carts, any frozen product found thawing on 2+ carts, 3+ hot foods exceeding 3 hours, or production run over 45 minutes. “Outside thresholds” more than 10%.
