By taste receptors. The microvili on receptors depolarise sensory neurones.
Travels to medulla via CNVII (facial), IX (glossopharyngeal) and XI (accessory)

Food avoidance/ingestion
Pre-absorptive insulin release
Salivation
Diuresis and apnoea when water is present in pharynx
